After measuring clam samples, a further "sub-sample" may be retained for taste-testing, determination of pea-crab commensalism/parasitism to entertain the partygoer, and other such important parameters.
Sautee shallots and garlic in bacon grease, avodaco oil, and beer. Add clams and cover. Cook until all are popped open. Serve clams with broth poured over and a side of crusty bread.
